The MOOM – Museum of Olive Oil of Matera is located in the Sassi of Matera, inside an ancient rock-cut olive mill in Vico 1° Casalnuovo. Dating back to the 15th–16th century, the original structure was entirely carved into the tuff rock and was expanded over time to respond to technological developments and increased production. The excavated material was often reused, and the rock itself served as structural support for equipment, storage areas, and cisterns. The upper part of the building was constructed between the late 19th and early 20th centuries. Located along Via Casalnuovo, one of the few roads accessible by vehicles in the Sassi, the mill once stood in a peripheral area suitable for activities linked to the rural tradition that has always characterized the city.
